Delicious and easy-to-make cheesecake sugar cookie cups perfect for Valentine’s Day.
Ingredients

- 1 package sugar cookie dough
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup whipped cream
- Fresh strawberries, for topping
- Red sprinkles, for decoration
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a muffin tin and press sugar cookie dough into the bottom and up the sides of each cup.
- Bake for 10-12 minutes or until golden brown. Let cool completely.
- In a mixing bowl, beat the cream cheese until smooth.
- Add powdered sugar and vanilla extract, mixing until well combined.
- Fold in the whipped cream gently until fully incorporated.
- Spoon the cheesecake mixture into the cooled cookie cups.
- Top with fresh strawberries and red sprinkles.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For a chocolate version, use chocolate cookie dough.
- Can be made a day in advance and stored in the refrigerator.
- Feel free to use other fruits for topping, such as raspberries or blueberries.
