Easy Eclair Cake Dessert is a delightful no-bake treat that combines layers of graham crackers, creamy vanilla pudding, and whipped topping, all topped with a rich chocolate glaze.

- 2 packages of graham crackers
- 2 cups of milk
- 1 package (3.4 oz) of instant vanilla pudding mix
- 1 container (8 oz) of whipped topping, thawed
- 1 cup of semi-sweet chocolate chips
- 1/4 cup of butter
- 1/4 cup of milk (for the chocolate glaze)
Instructions
- In a mixing bowl, combine the milk and instant vanilla pudding mix. Whisk until smooth and thickened.
- Fold in the whipped topping until well combined.
- In a 9×13 inch dish, layer graham crackers on the bottom.
- Spread half of the pudding mixture over the graham crackers.
- Add another layer of graham crackers on top of the pudding.
- Spread the remaining pudding mixture over the second layer of graham crackers.
- Top with a final layer of graham crackers.
- In a saucepan, melt the chocolate chips and butter over low heat, stirring in the milk until smooth.
- Pour the chocolate glaze over the top layer of graham crackers.
- Refrigerate for at least 4 hours or overnight before serving.
Notes
- For best results, allow the cake to chill overnight.
- You can substitute the chocolate glaze with a store-bought chocolate frosting if desired.
