A simple and delicious one-pan meal featuring chicken, rice, and a creamy tzatziki sauce.

- 1 lb chicken breast, diced
- 1 cup rice
- 2 cups chicken broth
- 1 cup tzatziki sauce
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large baking dish, combine the diced chicken, rice, chicken broth, and olive oil.
- Season with salt and pepper, then stir to combine.
- Spread the tzatziki sauce evenly over the top.
- Add the cherry tomatoes and cucumber on top of the tzatziki.
- Cover the dish with aluminum foil and bake for 30-35 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the rice is tender.
- Let it cool for a few minutes before serving.
Notes
- For a spicier version, add red pepper flakes to the chicken mixture.
- Feel free to substitute the chicken with tofu for a vegetarian option.
- Leftovers can be stored in the refrigerator for up to 3 days.
