Description

A simple and delicious one-pan meal featuring chicken, rice, and a creamy tzatziki sauce.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup tzatziki sauce
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large baking dish, combine the diced chicken, rice, chicken broth, and olive oil.
  3. Season with salt and pepper, then stir to combine.
  4. Spread the tzatziki sauce evenly over the top.
  5. Add the cherry tomatoes and cucumber on top of the tzatziki.
  6. Cover the dish with aluminum foil and bake for 30-35 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the rice is tender.
  8. Let it cool for a few minutes before serving.

Notes

  • For a spicier version, add red pepper flakes to the chicken mixture.
  • Feel free to substitute the chicken with tofu for a vegetarian option.
  • Leftovers can be stored in the refrigerator for up to 3 days.
