- 1 lb chicken breast
- 1 cup dill pickles, chopped
- 1/2 cup ranch dressing
- 8 small tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup shredded cheese
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat.
- Add the chicken breast and cook until golden brown on both sides.
- Remove chicken from skillet and let it cool slightly.
- Once cooled, smash the chicken with a fork.
- In a bowl, mix the smashed chicken with chopped dill pickles and ranch dressing.
- Warm the tortillas in a separate skillet or microwave.
- Assemble the tacos by placing the chicken mixture on each tortilla.
- Top with shredded lettuce, diced tomatoes, and shredded cheese.
- Serve immediately and enjoy!
