- 1 1/2 cups dark chocolate chips
- 1/4 cup unsalted butter
- 3 large eggs
- 1/2 cup granulated sugar
- 1 teaspoon peppermint extract
- 1 cup heavy cream
- 1 pre-baked tart shell
- Chocolate shavings for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Melt the dark chocolate chips and butter together in a double boiler.
- In a separate bowl, whisk the eggs and sugar until light and fluffy.
- Combine the melted chocolate mixture with the egg mixture and add peppermint extract.
- In another bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the chocolate mixture until fully combined.
- Pour the mousse into the pre-baked tart shell and smooth the top.
- Chill in the refrigerator for at least 4 hours or until set.
- Garnish with chocolate shavings before serving.
Notes
- For a stronger peppermint flavor, increase the peppermint extract to 1 1/2 teaspoons.
- Ensure the tart shell is completely cooled before adding the mousse.
- This tart can be made a day in advance for convenience.
