Description

Hillbilly Pie, also known as Old-Fashioned Poor Man’s Cherry Pie, is a classic dessert that brings back nostalgic flavors with its simple ingredients and delightful taste.


Ingredients

  • 2 cups fresh or frozen cherries
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 pie crust (store-bought or homemade)
  • 1 tablespoon butter

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine cherries, sugar, cornstarch, lemon juice, vanilla extract, and almond extract.
  3. Pour the cherry mixture into the pie crust and dot with butter.
  4. Cover with a second pie crust, seal the edges, and cut slits in the top crust for steam to escape.
  5. Bake in the preheated oven for 30-35 minutes or until the crust is golden brown.
  6. Let cool before serving.
