- 1/2 cup granulated sugar
- 1/2 cup sour cream
- 2 large eggs

- 1/2 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter, then press into the bottom of cupcake liners.
- In another bowl, beat the cream cheese and sugar until smooth.
- Add sour cream, eggs, and vanilla extract, mixing until well combined.
- Pour the cheesecake mixture over the crust in each cupcake liner.
- Bake for 20-25 minutes or until the centers are set.
- Let cool, then refrigerate for at least 4 hours.
- Before serving, sprinkle granulated sugar on top and use a kitchen torch to caramelize the sugar until golden brown.
