Description

Creamy Tuscan Chicken is a delicious and rich dish featuring tender chicken breasts cooked in a creamy sauce with sun-dried tomatoes, spinach, and Italian herbs.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet.
  3. Cook the chicken for about 6-7 minutes on each side until golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add minced garlic and sauté for 1 minute.
  6. Add sun-dried tomatoes and spinach, cooking until the spinach wilts.
  7. Pour in the heavy cream and stir in Italian seasoning.
  8. Bring the mixture to a simmer, then add Parmesan cheese and stir until melted.
  9. Return the chicken to the skillet, coating it in the creamy sauce.
  10. Serve hot, garnished with additional Parmesan if desired.

Notes

  • For a lighter version, substitute heavy cream with half-and-half.
  • Serve with pasta or rice for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
