- 1 lb chicken breast, diced
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add the diced chicken and cook until browned and cooked through.
- Stir in the garlic and sun-dried tomatoes, cooking for an additional 2 minutes.
- Pour in the chicken broth and bring to a simmer.
- Add the heavy cream and Parmesan cheese, stirring until the sauce is smooth.
- Combine the cooked pasta with the sauce, mixing well to coat.
- Season with salt and pepper to taste, then serve hot.
Notes
- For a lighter version, substitute heavy cream with half-and-half.
