Description

A refreshing and creamy pasta salad featuring sweet corn, perfect for summer gatherings.


Ingredients

  • 8 oz pasta of your choice
  • 2 cups fresh corn kernels
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup lime juice
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the corn, cherry tomatoes, and red onion.
  3. In a separate bowl, mix together the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
  4. Add the cooled pasta to the corn mixture and pour the dressing over it.
  5. Toss everything together until well combined.
  6. Garnish with fresh cilantro before serving.

Notes

  • For a spicier kick, add diced jalapeños.
  • This salad can be made a day in advance for better flavor.
