- 8 oz penne pasta
- 1 lb chicken breast, diced
- 1 tbsp Cajun seasoning
- 2 cups heavy cream
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes
- 1/2 cup green onions, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the penne pasta according to package instructions until al dente, then drain.
- In a large skillet, heat olive oil over medium heat and add the diced chicken. Season with Cajun seasoning, salt, and pepper, and cook until the chicken is browned and cooked through.
- In a large bowl, combine the cooked pasta, chicken, heavy cream, diced tomatoes, and half of the cheddar cheese. Mix well.
- Transfer the mixture to a greased baking dish and top with the remaining cheddar cheese and chopped green onions.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
