- 8 oz goat cheese
- 1 cup dried cranberries
- 1/2 cup chopped pecans
- 1 tbsp honey
- 1 tsp fresh rosemary, chopped
Instructions
- In a bowl, mix the goat cheese, honey, and chopped rosemary until well combined.
- Form the mixture into a log shape.
- Roll the log in the chopped pecans until fully coated.
- Wrap the log in plastic wrap and refrigerate for at least 1 hour.
- Before serving, roll the log in dried cranberries to coat the outside.
- Slice and serve with crackers or bread.
Notes
- For a sweeter flavor, add more honey to the cheese mixture.
- Can be made a day in advance for convenience.
