Description

Chicken Sorrentino is a delightful Italian dish featuring breaded chicken breasts topped with prosciutto, eggplant, and melted cheese, all baked to perfection.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 slices of prosciutto
  • 1 medium eggplant, sliced
  • 1 cup of mozzarella cheese, shredded
  • 1/2 cup of Parmesan cheese, grated
  • 1 cup of all-purpose flour
  • 2 eggs, beaten
  • 1 cup of breadcrumbs
  • Salt and pepper to taste
  • Olive oil for frying
  • 1 cup of marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. Dredge each chicken breast in flour, dip in beaten eggs, and coat with breadcrumbs.
  4. Heat olive oil in a skillet over medium heat and fry the chicken until golden brown on both sides.
  5. In a separate pan, sauté the eggplant slices until tender.
  6. In a baking dish, layer the fried chicken, top each with a slice of prosciutto, sautéed eggplant, and mozzarella cheese.
  7. Pour marinara sauce over the top and sprinkle with Parmesan cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving.
