- 4 boneless, skinless chicken breasts
- 4 slices of prosciutto
- 1 medium eggplant, sliced
- 1 cup of mozzarella cheese, shredded
- 1/2 cup of Parmesan cheese, grated
- 1 cup of all-purpose flour
- 2 eggs, beaten
- 1 cup of breadcrumbs
- Salt and pepper to taste
- Olive oil for frying
- 1 cup of marinara sauce
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper.
- Dredge each chicken breast in flour, dip in beaten eggs, and coat with breadcrumbs.
- Heat olive oil in a skillet over medium heat and fry the chicken until golden brown on both sides.
- In a separate pan, sauté the eggplant slices until tender.
- In a baking dish, layer the fried chicken, top each with a slice of prosciutto, sautéed eggplant, and mozzarella cheese.
- Pour marinara sauce over the top and sprinkle with Parmesan cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
