Cherry–Lime Chili Spark Jam is a vibrant and zesty jam that combines the sweetness of cherries with the tanginess of lime and a hint of chili for a unique flavor experience.

- 2 cups fresh cherries, pitted
- 1/2 cup fresh lime juice
- 1 cup sugar
- 1/4 cup water
- 1–2 teaspoons chili flakes (adjust to taste)
- 1 package (1.75 oz) fruit pectin
Instructions
- In a large pot, combine the pitted cherries, lime juice, and water. Cook over medium heat until the cherries are soft.
- Add the sugar and chili flakes, stirring until the sugar is dissolved.
- Bring the mixture to a boil and add the fruit pectin, stirring constantly.
- Continue to boil for 1-2 minutes until the mixture thickens.
- Remove from heat and let it cool slightly before pouring into sterilized jars.
- Seal the jars and let them cool completely before storing in the refrigerator.
Notes
- Adjust the amount of chili flakes based on your spice preference.
- This jam pairs well with cream cheese on crackers or as a topping for desserts.
- Store in the refrigerator for up to 3 weeks.
