- 1 head Cauliflower
- 1 cup Mozzarella Cheese
- 1/4 cup Parmesan Cheese
- 1 Egg
- 2 cloves Garlic
- 1 teaspoon Italian Seasoning
- Salt & Pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Cut your cauliflower into florets and steam until softened, then squeeze out excess moisture.
- Place the squeezed cauliflower in a food processor and pulse until it resembles rice.
- In a bowl, mix the riced cauliflower, mozzarella, Parmesan, egg, garlic, Italian seasoning, salt, and pepper until combined.
- Spread the mixture into a rectangle on a lined baking sheet, about 1/2 inch thick.
- Bake for 15-20 minutes or until golden brown and crispy.
- Remove from the oven, let cool slightly, and enjoy.
