- 2 green onions, chopped

Instructions
- Heat sesame oil in a large skillet over medium-high heat.
- Add minced garlic and ginger, sauté for 1 minute until fragrant.
- Add shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
- Stir in mixed vegetables and cook for another 2-3 minutes.
- Add cooked rice and soy sauce, mixing well to combine.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
