Description

Candy Cane Chocolate Chip Muffins are a festive treat perfect for the holiday season, combining the flavors of peppermint and chocolate in a delicious muffin.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1/2 teaspoon peppermint extract
  • Crushed candy canes for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the melted butter, milk, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the chocolate chips and peppermint extract.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Sprinkle crushed candy canes on top of each muffin.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a stronger peppermint flavor, increase the amount of peppermint extract.
  • These muffins can be stored in an airtight container for up to 3 days.
  • Feel free to substitute dark chocolate chips for a richer taste.
