Description

A hearty and flavorful Cajun Potato Soup that combines the richness of potatoes with the spicy kick of Cajun seasoning.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Add diced potatoes and Cajun seasoning, stirring to coat.
  4. Pour in the broth and bring to a boil.
  5. Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  6. Use a potato masher to mash some of the potatoes for a creamy texture.
  7. Stir in the heavy cream and season with salt and pepper.
  8. Serve hot, garnished with chopped green onions.

Notes

  • For a spicier soup, add more Cajun seasoning or diced jalapeños.
