Ingredients

- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic, sauté until translucent.
- Add diced potatoes and Cajun seasoning, stirring to coat.
- Pour in the broth and bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Use a potato masher to mash some of the potatoes for a creamy texture.
- Stir in the heavy cream and season with salt and pepper.
- Serve hot, garnished with chopped green onions.
Notes
- For a spicier soup, add more Cajun seasoning or diced jalapeños.
- This soup can be made ahead of time and reheated.
- Leftovers can be stored in the refrigerator for up to 3 days.
