Ingredients

Instructions

  1. Toast the slices of whole grain bread until golden brown.
  2. While the bread is toasting, cook the egg to your preference (fried, scrambled, or poached).
  3. Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and season with salt and pepper.
  4. Spread the mashed avocado evenly on one slice of toasted bread.
  5. Place the cooked egg on top of the avocado.
  6. Add a slice of cheese and fresh spinach or arugula if desired.
  7. Top with the second slice of bread and press down gently.
