Instructions
- Toast the slices of whole grain bread until golden brown.
- While the bread is toasting, cook the egg to your preference (fried, scrambled, or poached).
- Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and season with salt and pepper.
- Spread the mashed avocado evenly on one slice of toasted bread.
- Place the cooked egg on top of the avocado.
- Add a slice of cheese and fresh spinach or arugula if desired.
- Top with the second slice of bread and press down gently.
- Cut the sandwich in half and serve immediately.
