- 1 cup coconut milk
- 1 cup sugar
- 1/2 cup sweet chili sauce
- 1/4 cup lime juice
- 1/4 cup shredded coconut
- 1 tablespoon cornstarch
- 1 tablespoon water
Instructions
- In a saucepan, combine coconut milk and sugar over medium heat, stirring until sugar dissolves.
- Add sweet chili sauce and lime juice, mixing well.
- In a small bowl, mix cornstarch and water to create a slurry.
- Slowly add the slurry to the saucepan, stirring constantly until the mixture thickens.
- Remove from heat and stir in shredded coconut.
- Pour the jam into sterilized jars and let it cool before sealing.
Notes
- Store in the refrigerator for up to 2 weeks.
- Great as a spread on toast or as a dip for snacks.
- Adjust the amount of sweet chili sauce to taste for desired spiciness.
