Ingredients

- 2 cups of Brussels sprouts, halved
- 2 cups of carrots, sliced
- 2 cups of bell peppers, chopped
- 1 cup of red onion, sliced
- 3 tablespoons of olive oil
- 1/4 cup of balsamic vinegar
- 2 tablespoons of honey
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the Brussels sprouts, carrots, bell peppers, and red onion.
- Drizzle with olive oil, balsamic vinegar, honey, salt, and pepper. Toss to coat evenly.
- Spread the vegetables in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and caramelized.
- Remove from the oven and serve warm.
Notes
- Feel free to use any seasonal vegetables you have on hand.
- For a vegan version, substitute honey with maple syrup.
